About this cut - Tri tip

      Tri-tip is a triangular cut of beef sourced from the bottom sirloin of the cow's hindquarter. It’s one of two muscles in this primal cut, the other being the bavette steak. Both offer unique advantages. The bavette, a larger cut weighing about 3½ to 4 pounds, is tapered on both ends. Best prepared sliced thin, it cooks quickly like a skirt steak. In contrast, the tri-tip is smaller (2 to 3 pounds) and tapered on one end. This flavorful cut shines when cooked whole, making it ideal for roasting or grilling. Despite their size and preparation methods, both cuts are highly marbled and delicious.
